- 2 cups raw, unsalted pistachios
- ½ cup powdered sugar
- 1 pinch of salt
- ¼ – ½ cup neutral oil (like vegetable or coconut oil)
INSTRUCTIONS:
Blend the Pistachios: In a high-speed blender or food processor, add the pistachios. Blend on high for a total of two minutes, pausing to scrape down the sides as needed. The pistachios will first turn into a powder and then become grainy.
Add Sweetness & Salt: After two minutes, add the powdered sugar and a pinch of salt to the blender.
Achieve Desired Consistency: With the blender running, slowly begin to add the oil. Start with ¼ cup and add more as needed. For a thicker paste, use less oil. For a thinner, pourable consistency, continue adding more oil until you reach your desired texture.
Store: Once finished, transfer the pistachio paste to an airtight jar. If the paste is still warm from blending, be sure to let it cool completely before sealing the jar. It will last for a few weeks in a cool, dark place or up to four weeks in the refrigerator.

- Make the Pistachio Cream: In a bowl, combine the mascarpone cheese, powdered sugar, and pistachio paste. Mix with a spoon or spatula until the mixture is smooth and evenly blended. Be careful not to overmix! Once ready, transfer the cream into a piping bag.
- Assemble the Desserts: Grab one ladyfinger and pipe a generous line of your pistachio cream down the center. Then, take a second ladyfinger and gently press it on top to create a sandwich.

- Roll the entire dessert in crushed pistachios.
