This everything‑but‑the‑bagel fried egg sandwich is the kind of craveable, messy‑perfect creation you can eat at 8 a.m., 2 p.m., 9 p.m., or anytime hunger taps you on the shoulder. It’s fast, flavour‑stacked, and feels like a full café plate – even though it comes together in one pan.
why it slaps at any hour
- the seasoning fries right into the eggs, giving you that toasty bagel‑shop vibe
- the runny yolk becomes its own built‑in sauce
- the Valentina‑spiked mayo brings heat and tang
- the garlic‑sautéed tomatoes add brightness
- the Mediterranean sides turn it into a full meal, not just a sandwich
ingredients
- 2 eggs
- everything‑but‑the‑bagel seasoning
- a splash of avodado or extra virgin olive oil
- 2 slices rye bread, toasted (or any bread you like…this would even be great in a wrap)
- mayo + any hot sauce or Sriracha – my personal favourite is the Valentina brand hot sauce (mix to your heat level)
- sliced tomatoes or cherry tomatoes
- 1 clove garlic, crushed
- parmesan cheese
- optional: sliced avocado or any veg you love
- sides: hummus, kalamata olives, feta chunks, dill pickles, carrot sticks
how to make it
1. fry the seasoned eggs

Heat a little oil in a pan. Sprinkle everything‑but‑the‑bagel seasoning right into the oil so it blooms and gets toasty. Crack in your eggs. Flip when the edges crisp but the yolks stay runny.

2. build the base
Mix mayo with Valentina (or any other hot sauce) until it’s the perfect spicy‑creamy blend. Spread it on one slice of toasted rye. Place the first fried egg on top.

3. the yolk moment
Take the second fried egg, slice into the yolk, and let it run over the first egg like a built‑in sauce. Lay that egg down gently.

4. quick garlic tomatoes
In the same pan, toss in your tomatoes with crushed garlic. Sauté until softened and glossy. Pile them onto the second slice of rye.

5. add your extras
I added dill & parmesan cheese but you could also add some avocado or any other veg…go wild! Close the sandwich – carefully – it’s a glorious mess.

serve it like a full plate
This sandwich shines on its own, but the sides make it feel like a full lunch or dinner:
- hummus
- kalamata olives
- feta chunks
- dill pickles on a toothpick
- carrot sticks for dipping

It’s rustic, colourful, and feels like something you’d order at a tiny neighbourhood café – except you made it in minutes.
